This egg-free chocolate raspberry mousse requires just 4 ingredients, and is sure to be a crowd pleaser at your next get together! Make the chocolate cream mixture ahead of time, and whip just before serving. Be sure to double or triple the recipe...just trust us!
INGREDIENTS

1 cup heavy cream

3 tbsp Small Miracles black tea or your favourite berry black tea

4oz bittersweet chocolate

pinch of salt
METHOD

In a small pot, add the cream and tea. Heat over medium-low, stirring constantly until small wisps of steam form. Do not boil. Cover and steep for 5 minutes.

Meanwhile, roughly chop the chocolate and set aside.

After 5 minutes, press the tea leaves with the back of a spoon before removing and discarding. Stir in the chopped chocolate and pinch of salt until the chocolate is fully melted and the mixture is smooth.

Transfer to a shallow bowl and cover. Refrigerate for 4 hours or overnight until the mixture is completely chilled.

Before serving, whip the chocolate mixture with a handheld mixer or stand mixture until stiff peaks form.

Transfer to a piping bag, and pipe into glass serving cups. Garnish with a fresh or frozen raspberry, and enjoy!
