Lemon Matcha Energy Balls

Matcha and lemon go so well together! Add in some coconut and you've got delicious energy-boosting treats in the making. These are incredibly easy to make and the fact that they don't have to be baked, makes them perfect for summer. No oven heat to sweat over :)

  • 1/2 cup raw almonds, ground
  • 1/2 cup unsweetened coconut shreds, ground 
  • 1 tsp. matcha green tea powder (try our organic Culinary Grade Matcha)
  • 1/2 tsp. lemon zest
  • juice of 1 lemon
  • 1 tsp. maple syrup
  • 1 tbsp. coconut oil
  • splash of coconut milk (optional)
  • coconut flour (optional)

Use a food processor to grind the raw almonds and coconut shreds (grind separately). Combine all above ingredients, except coconut milk and coconut flour, into a medium sized bowl. Mix into a dough and check consistency. 

We found a splash or two of coconut milk made the consistency and flavour even better. Try to time it when you'd be using the rest of the can of coconut milk for cooking, smoothies or lattes. 

Is the dough too wet? Add coconut flour until the desired consistency is found. You don't want it to be too dry and crumbly. Roll into 1 inch balls. Store in the fridge for 2-3 days. Freeze any extras you won't finish in that time because lemon tends to get more sour tasting over time.
